2008 Pinot Grigio
SUMMARY
This wine is made of 100% Pinot Grigio grapes grown exclusively in Massachusetts. It is a dry white wine fermented and aged entirely in stainless steel tank which helps preserve the true and original nature of our Pinot Grigio fruit.

PRODUCTION
NOTES
The 2008 growing season was challenging especially due to extended periods of rain throughout the Summer. The region was also hit with considerable rainfall in the days just prior to harvest. As a result, most grapes reached an average degree of ripeness. Yield was just short of 3 tons per acre.
Hand harvest during the cool hours of the early morning, the grapes were gently de-stemmed and pressed at the winery. The juice was then fermented entirely in stainless steel tank. Fermentation lasted about 3 weeks at an average temperature of 55F. In order to finish this wine off-dry, the tank was chilled to a level where yeast could no longer convert sugar to alcohol. Wine was settled in tank for 4 months before bentonite fining to accomplish moderate heat stability. Malolactic fermentation was prevented by .45 micron filtration during bottling. The sweetness in this wine is residual from the juice, not added sugar. Bottled on September 2009. Released on April 21st 2010. 100 cases produced.
