At the winery grapes were lightly crushed before pressing. The juice was fermented entirely in stainless steel tank. Fermentation was completed in 3 weeks at an average temperature of 58F. The wine was fined with bentonite and not aged in any oak barrels. Malolactic fermentation was prevented by temperature control. Released in March 2013. 180 cases produced.
